Date Night Cookie Making With Help From Mighty Nut PB & Giveaway!

The wife and I both have wicked busy schedules so we squeeze in date nights when we can. Last night we attended a screening for a new TV show on Starz "Ash vs Evil Dead." They had a green screen with props... so of course we took advantage!

Tonight we wanted to stay in and bake cookies.

Okay okay we all know I can't cook so let me rephrase that! I would be buying the supplies and documenting, while the wife did the actual baking. See win-win. :P

We get edible cookies and quality time together.

As a Sweatpink ambassador, I was given the opportunity to test out Mighty Nut Powered Peanut Butter.

To create each batch of Mighty Nut, they take quality USA grown peanuts, roast them, and press them to remove most of the fat... what remains is protein, fiber and delicious peanut buttery taste.

Since Peanut Butter & Co. began as a peanut butter sandwich shop in New York City, our mission has always been simple – to help the world find delicious new ways to enjoy peanut butter every day! Over the years they’ve been a part of millions of tasty breakfasts, satisfying lunches, delicious snacks, and Instagram-worthy desserts.  More and more, they’re hearing about how customers like you are interested in health and fitness, and finding ways to enjoy the foods you love but with added protein and less fat and fewer calories. And that’s why they’re introducing Mighty Nut® powdered peanut butter – it’s the delicious peanut butter taste you love, but in a new way that fits your active lifestyle.

While I finished up a run on the treadmill, the wife collected all of our necessary ingredients. Now I made the wise decision to use Special Dark chocolate chips over regular old chips. I know I know I am amazing! You are welcome my friends.

Ingredients:

  • 1 stick butter, softened
  • 1/2 cup brown sugar, firmly packed
  • 1 cup all-purpose flour
  • 4 tablespoons Might Nut powdered PB
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 egg
  • 1 cup special dark chocolate chips
Mighty Nut powdered peanut butter can be rehydrated and used as a spread or dip, or as an ingredient in baking, cooking or smoothies and it is available in four delightful varieties.

Directions:

  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  2. In a large mixing bowl, add the butter and sugar. Using a stand mixer (or hand mixer), beat until the butter and sugar have creamed. Add in the remaining ingredients, and mix until a soft dough forms.
  3. Using a cookie scoop drop the cookie dough on the baking sheet and bake the cookies for 10-12 minutes or until golden brown. Remove from the oven and allow to cool.

While we figured we could make 24 smaller cookies or 12 large, we went with the larger size. We only live once, right? When the dough went into cookie balls (giggity), we ended with 13 so we had to share a raw cookie dough ball. Mmm... I could not remember the last time I ate raw cookie dough.

You know I think the wife made this recipe easy enough that even I could cook them. Maybe I will try it one time.

NAH!! I like supervising too much! ;)

Don't these look amazing?? I can tell you they even tasted better than they appear! :) Bravo dear wife! Bravo! :)

These cookies were extra peanut buttery and I loved it.

PB + Special Dark Chocolate = Heaven

Now Mighty Nut can be used in more than just baking.

A sprinkle of Mighty Nut can supercharge a PB&Jor a fun snack like Ants on a Log.  Or rehydrate Mighty Nut with a little water and use it as a spread or a dip for fruit or veggies.  Mighty Nut is mighty easy to add to your favorite smoothie, and is perfect for all of your low calorie, high protein, and gluten free baking needs.
